You can refrigerate and eat on this colorful combo for several days so it's perfect for team parties or pot-luck lunches at school!

FLAVOR FIESTA
Total prep time: 15 minutesWhat you need:
- Quinoa
- Black beans (canned are easiest)
- Bell peppers (red, yellow & orange)
- Pico De Gallo (can easily be bought at a local Mexican restaurant or at the supermarket)
- Whole wheat tortillas
Directions:
- Two cups of quinoa - cook following directions on packaging
- Microwave 1-2 cans of black beans in a bowl. (flavored black beans if you prefer your food a little spicy)
- Chop 9 small yellow, red and orange bell peppers to add flavor and color
- Get a large plastic container with a lid - preferably long and rectangular
- Pour ingredients into container and mix thoroughly
- Salt to flavor
This snack is great with:
- Whole wheat tortillas
- Pita Bread
- Tortilla chips
- Rice cakes
- Melba toast
- On top of a potato
- On top of a spinach salad
